Look at one of these yolks next to even a cage free egg. The fancy eggs are several shades yellower, the yolks are bigger, the final product more colorful and the omelet/scrambled egg whatever fresher and fluffier. I was a skeptic too, but good eggs really do make a clear difference. With that said, they're still a little pricey.
